Windy Peak wines are made at De Bortoli's Dixon's Creek winery from carefully selected fruit grown in the Yarra Valley, King Valley and other regions. The wines are generous in flavour with fine grained texture, perfect for bringing out the best in food. Fruit is sourced from carefully selected parcels of Shiraz grown on the red volcanic soils of Northern Heathcote. Fruit is harvested at 14.0-14.5 baume to achieve a balance of fruit ripeness and balanced acidity. Grapes are destemmed and crushed into both static and rotary fermenters. The resultant wine is then fermented for up to two weeks on skins prior to pressing and racking. A third of the blend is matured for 5 months in older casks and the remainder stays in tank for freshness and brightness.

Sourced from our estate Malpas Road Vineyard, planted in 1991 on land which was originally referred to as ‘Bay of Biscay’. This is an obvious reference to the relatively infertile cracking, grey-black soil upon which our hand-tended Shiraz patch does its work. The fissures which occur as the black soil cracks apart, sever surplus root structure; a process which naturally lessens vigour and enhances ultimate grape quality. Other fruit parcels were sourced from the slightly higher elevated vines of the Penny’s Hill Vineyard. With almost ideal weather conditions for whites exceptional fruit has been produced showing intense varietal flavours that are typical Margaret River. Aromatic varieties were outstanding with fresh citrus, lemon blossom and stone fruit on the nose and palate balanced off by crisp acidity. The temperature cooled off toward the end of February providing ideal weather conditions for the red varietals to fully ripen their flavour profiles and tannins. Once again there was a huge amount of Marri blossom leading into vintage therefore Silvereye bird damage was minimal. Flavour intensity was further benefited by the fact that cropping levels were reduced by around 30% across the region due to storms in early spring.

Grape varieties

- 93% Shiraz, 4% Cabernet Sauvignon, 2% Merlot Vinification - After night harvesting the Shiraz grapes were crushed into static fermenters. After crushing the must was inoculated with AWRI 796 yeast. Controlled fermentation occurred over seven days, commencing at 24°C reducing to 20°C. Gentle Pump-overs occurred six times daily to maximise the extraction of colour whilst still retaining a soft juicy palate structure. Pump-overs were reduced to twice daily towards the end of fermentation to minimise seed tannin extraction. To avoid any harsh tannins and bitterness only free run and first pressings were used in this blend. After pressing the wines were settled before racking onto American oak for 3 months. (264168-1)

Once received in the winery the fruit was crushed, destemmed and received a three day cold soak to gently extract the dark and brooding characters of the berries. Fermentation was kept at 20 degrees Celsius to retain the aromatic intensity. The ferments were pumped over four times daily and had two rack and returns during the ten days on skins. This helped maximise colour, flavour and tannin extraction from the skins. The wine spent 9 months in a combination of American and French oak barriques (30% New) and went through a rigorous barrel selection prior to blending and bottling. (264155-2)

Parcels of fruit from selected vineyards were fermented in temperature controlled stainless steel for upto ten days to maximise colour and flavour extraction. After primary fermentation the wines were soft pressed andunderwent malolactic fermentation. Aged on French oak for a further six months before being blended and filtered prior to bottling.The mild weather conditions during the lead up to harvest together with warm January temperatures were the perfect conditions for optimal flavour development across the white varieties. The odd burst of extreme heat resulted in an early start to vintage but as the harvest progressed these conditions moderated, extending the ripening period for the reds ensuring they too reached maturity with an ideal balance of sugar, acid, colour and flavour. This single vineyard has become one of Australia’s most respected cool climate Sauvignon Blanc and Chardonnay producers. Our parcels of fruit receive high input viticulture, hand-pruning, shoot thinning, leaf plucking, bunch thinning, multiple wire-lifts, low cropping levels and hand picking. The Vineyard is under the ownership of Matthew Hill-Smith and his daughter Christobel, representing seven generations of continuous Hill-Smith family winemaking since 1849. Point Eight refers to the total plantings of Shiraz on this single vineyard being .8 of a hectare. After hand picking, 90% of the fruit was destemmed and 10% left as whole bunches. The fruit was fermented in small open fermenters which were hand plunged daily before being basket pressed and matured in French Oak barrels for approximately 11 months. Marko’s second vintage of Shiraz is sourced from point eight of a hectare. The wine displays dark fruits of plum and rhubarb with an uncanny coffee and chocolate nose. (264157-3)

Vintage Conditions

The growing season was one of the wettest on record, replenishing the soil moisture content and setting the vines up very well. The wet conditions were capped off by a cooler than average spring and early summer. Temperatures normalized at the start of February, with the ensuing long, cool ripening period resulting in lovely fruit flavours and natural acidity. Viticulture/ Winemaking Our Smith’s vineyard is home to some of the most exciting clones of Merlot in Australia; the Argentinean sourced 8R and Italian Q45-14. Planted in 2003 we are starting to see the fruit mature beautifully. The use of these clones combined with carefully considered viticulture and winemaking practices are the foundation of this special wine. A large portion of this wine is created by fermenting “berries in the barrel”. Three tonnes of handpicked Merlot was destemmed into French barriques without crushing the berries. Whole berry fermentation minimises the tannin extraction and creates a style of Merlot that is powerful yet generous and flavoursome without harsh tannins.Ancient and secluded, Wrattonbully is one of Australia’s most exciting viticultural discoveries of recent times. Blessed with the celebrated soil profile of terra rossa over limestone, the region is rapidly establishing a high class reputation for wines of depth and elegance. Controlled fermentation occurred over seven days, commencing at 24°C reducing to 20°C. Gentle Pump-overs occurred six times daily to maximise the extraction of colour whilst still retaining a soft juicy palate structure. Pump-overs were reduced to twice daily towards the end of fermentation to minimise seed tannin extraction. To avoid any harsh tannins and bitterness only free run and first pressings were used in this blend. After pressing the wines were settled before racking onto American oak for 3 months. (262470-1)

Vintage Conditions

- Winter rainfall was light yet consistent, leading in to a warm, dry spring, with good flowering and fruit set allowing for even berry development. Summer was relatively cool, with January rains providing vines with a much needed drink. Fine, mild conditions ensured long, cool ripening, resulting in fleshy, aromatic and fruit-filled wines. Maturation - 14% was matured with French oak to enhance structure and complexity, while maintaining fruit character and vibrancy. In his heyday, Wolfgang Blass was confident and charismatic – just like his wines. He pushed winemaking boundaries, revolutionising the way Australians enjoyed wine. Fifty years on the world has changed, but Wolf’s spirit hasn’t, continuing to motivate and encourage our next generation winemakers to uphold his legacy. The 2014 growing season was one of the wackiest in living memory! Following the low yielding 2013 vintage the season started well, but the first threat came from unseasonal late frosts. Summer was the hottest on record with 13 days recording a maximum of over 40ºC. During this period the devastating Eden Valley bushfire ignited on 17 January adjacent the Eden Valley Township, but thankfully (for us), the winds took it in an opposite direction. The hottest ever summer was followed by the wettest day since 1969 with more than 100 mm of rain falling on Valentine’s Day. Whilst some rain would have been welcome, too much of a good thing caused further loss of crop through splitting of fruit. Harvest was then on in earnest beginning with some Riesling blocks on 26 February and finishing earlier than usual with Cabernet and Shiraz on 6 April. A rollercoaster year that ultimately produced good fruit, but very low yields. (263879-1)
