Once the alcoholic fermentation was finished, 50% of the wine was transferred to French barrels of varying toasts and sizes (225l. and 400l.) for malolactic fermentation. When finished, the Pinot Noir was rested in barrels until blending, 9 months after the alcoholic fermentation had finished.
