After a dry winter, good rains in September arrived just in time to assist early growth, although this was less vigorous and therefore produced a smaller crop than normal. Conditions throughout summer were dry and warm before relieving rains and cooler conditions in autumn. Fruit was particularly intense with ripe, minty flavours and excellent varietal definition and structure.

The 1999 Cabernet Sauvignon Bin 707's dense ruby/purple color is followed by a tight but promising nose of black currants, leather, and licorice. In the mouth, there are abundant quantities of black currant fruit as well as hints of creosote, earth, truffles, and subtle oak. The acidity is high, much of it probably added, which is unfortunate as the raw materials look impressive. The high acidity compresses the palate and pinches the finish. - Robert M. Parker, Jr.

Winery Tasting Notes


An opaque mauve, with a black centre and dark crimson rim.


Varietal notes of blackcurrant and a hint of leaf are immediately apparent, with black olives and sweet dark fruits in the background. The wine shows cedary, spicy oak with thumbprint savoury smoky whiffs indicative of the ferment finishing in barrel.


Structurally tight and taut, in keeping with the variety, the wine is mouth-filling and expansive, with bright, ripe dark berry fruits and tightgrained, elongated tannins. With great finesse and showing excellent persistence of flavour, the wine's impress.

The 1964 Bin 707 Cabernet Sauvignon was Penfolds’ first commercial release of a single cabernet-based wine. Today, Bin 707 is justifiably regarded as one of Australia’s most important cabernets.

The winemaking philosophy and barrel maturation of Bin 707 is almost identical to Grange. The Bin 707 style combines intense varietal definition with new American oak to produce wines of great richness, harmony and concentration.

Over the years the development of Bin 707 Cabernet Sauvignon has mirrored the advances in winemaking and viticulture and in this sense has served as a representation of progress and excellence within the industry.Bin 707 proudly bears the Penfolds stamp – displaying a fascinatingly complex marriage of ripe, concentrated cabernet fruit and 100% new American oak, forged together through partial barrel fermentation. It displays dark berried fruit, mocha and chocolate overtones, with warm spice notes.

Bin 707 is a medium to long term cellaring style of wine. It will comfortably gain stature and complexity across more than two decades in the bottle.
