Holm Oak Riesling 2018 (12 x 750mL), TAS.

Holm Oak vineyard fruit gives us more mineral/citrus flavours; whilst the Rosevears vineyard that we lease, gives more aromatic and floral. This results in a beautiful flinty style with lifted floral aromatics and a strong citrus backbone. We harvested the fruit at around 11.5 Baume pressed to tank, racked and then cool fermented the juice with inoculated yeast. The wine was then lightly fined and filtered and bottled to maintain maximum freshness and aromatics.

Holm Oak Sparkling NV (6 x 750mL), TAS.

We hand harvest the Pinot Noir (60%) and Chardonnay (40%) when optimal acidity and flavour is reached. The fruit is then whole bunch pressed and fermented with a neutral yeast. A portion of the wine is transferred to barrel prior to the completion of primary fermentation. It underwent malolactic fermentation to soften the acidity and increase complexity. The wine was then tiraged to undergo traditional bottle fermentation, before spending time on lees for a period of 24 months prior to disgorging.

Holm Oak `The Wizard` Pinot Noir 2017 (6 x 750mL), TAS.

Although we take a pretty natural approach with all of our wines, the approach to making this wine was for minimal intervention. This wine is slowly evolving to include more of the new clones of Pinot that we have planted over the past 10 years. In particular, the MV6 and 115 add structure and elegance respectively to our older D5V12 clone which still makes up the base of this wine. 30% whole bunches were included in the ferments which was done in small open top fermenters. The ferments were allowed to start naturally and were then hand plunged up to 5 times a day. The wine was then basket pressed directly to barrel. Whilst we make wine specifically for the Wizard starting at pruning time the previous year we also have barrel selection tasting to ensure we select only the best barrels. We did this in January of 2018 and 20 barrels (60% new oak, 40% 1 year old) were chosen for this wine. The wine stayed in oak for a further 4 months and was bottled in May 2018.
