Didgeridoo Shiraz 2015 (6 x 750mL) SEA

Shiraz grapes from selected vineyards were fermented in temperature controlled stainless steel for around 7-10 days, to maximise colour and flavour extraction. After primary fermentation the wines were membrane pressed and underwent malolactic fermentation on French and American oak before being blended and filtered prior to bottling.

The mild weather conditions during the lead up to harvest together with warm January temperatures were the perfect conditions for optimalflavour development across the white varieties. The odd burst of extreme heat resulted in an early start to vintage but as the harvest progressed these conditions moderated, extending the ripening period for the reds ensuring they too reached maturity with an ideal balance of sugar, acid, colour and flavour.

Colour - Deep crimson red

Aroma - Mulberry and black cherry aromas with spice and an undertone of vanillin oak

Palate - Juicy ripe plum and red berry fruit flavours and hints of sweet oak. The finish is smooth with soft tannins and a touch of spice.
