Vinification

- The grapes are picked during the night and go directly to the pneumatic press .The Colombard stays on its fine lees during 7 days at very low temperature (below 2°C) , before fermentation, to enhance the varietal flavours. Our winemakers select only the clearest juice on the Vermentino. The fermentation is carried out at low temperature ( 15°C) with selected yeasts that allow fruity notes to develop. (252205-4)
