Penfolds `Bin 707` Cabernet Sauvignon 1983 (2 x 750ml), Coonawarra, SA.

Both Bottles been through Penfolds Re-Corking Win Clinic 2014

Bin 707 is a true Cabernet Sauvignon representation of the Penfolds ''House Style'': intensely-flavoured fruit; completion of fermentation and maturation in new oak; expressing a Penfolds understanding of multi-vineyard, multi-region fruit sourcing. Full-bodied and with proven cellaring potential, Bin 707 retains a secure place among the ranks of Australia''s finest Cabernets. Aromatically more perfumed than normal - old-garden fresh dark red rose, lavender, and ylang-ylang. It transitions upon sitting, to conform to a more recognisable Bin 707 varietal demeanour. Uniform across the palate, the Bin 707 is balanced and expressive with focussed, fine-grained tannins.

Winery Tasting Notes

Bin 707 is a very special wine in Penfolds range because it epitomises the excellence of the Cabernet Sauvignon variety as established in the premium regions of South Australia.

Winemaking Notes

The comparative scarcity of material of the desired standard sets a limit on the amount of wine made in any one vintage. This exceptional wine combines the fine character of Cabernet with the art of red wine making so traditional to Penfolds.
