Shiraz parcels were fermented separately in open top fermenters and gently pumped over four times daily for a period of six days,maximizing colour extraction while maintaining a soft tannin profile. Once fermentation was complete the must was then pressed off skins and the wine racked into a mixture of old French oak and allowed to mature for a period of ten months.

Winery Tasting Notes

Grown in the mineral rich soils of the Hilltops/Gundagai region nestled on Australia's Great Dividing range at elevations over and above 1699 ft. This wine is bright red purple in colour and has lifted aromas of plums and cherries, with subtle pepper and toasty oak. The palate is medium to full bodied with intense red fruit characters with hints of black pepper and French oak. Fine tannins round out the palate with a lingering finish.
