Winery Tasting Notes

Colour

The appearance is a bright crimson, cherry red with subtle hints of earthy brick red.

Aroma

The bouquet is a potpourri of complex savoury aromas, like walking into a farmer’s market. There are fresh dark berries, smoke house meats and dried herbs. Oak maturation is subtle but obvious and there are hints of baked pastry and spiced rum.

Palate

The palate is full bodied after the initial burst of ripe strawberry fruit. The savoury flavours of oak and smoked meats add weight and dimension from the middle and are supported by firm gripping tannins that give texture and balance. The finish is long lasting with a hint of mocha and dark chocolate.

Food Matching

This is a wine for sophisticated flavour pairings; duck liver pate on crispy lavosh bread or steak tartar with herbs, spices and raw egg yolk, confit duck leg or twice cooked Szechuan Pork Belly. It can handle the rich and luxurious flavours and is equally delicious along side BBQ lamb chops or veal scaloppini.

Cellaring Potential

Pinot Noir from this cool climate Adelaide Hills vineyard already has a solid reputation for cellaring. My first vintage was 2008 and it’s still drinking well now. I think 2017 will continue the tradition.
