Winery Tasting Notes

Colour - The appearance is bright yellow with brilliant clarity and hints of gold indicating the extra maturation.

Aroma - The bouquet has obvious toasty oak, buttery shortbread, creamy vanilla custard and a rich toffee caramel character. As the wine opens up in the glass it reveals added highlights of figs, melon and hazelnut.

Palate - The palate is full-bodied with luscious, mellow tannins and obvious oak intensity. The fruit is ripe and round with malo-lactic fermentation adding distinct hazelnut richness. The relatively high alcohol gives a warm, sweet sensation to the mouthfeel that adds to the creamy texture and lingers on the back palate. Vanilla spice and toasty oak combine with earthy nutmeg and cashew nut characters to round out the finish.

Food Matching - This Chardonnay should be enjoyed lightly chilled. It has the body weight and texture to handle richly flavoured meats and sauces. It’s ideal with BBQ chicken, veal and pork cutlets. Or try it with spicy chicken rissoles or whole baked Barramundi marinated in lemon juice and olive oil … delicious! Serve cool but not too cold to get the full aroma and flavour.

Cellaring Potential - I’ve released this wine now after four years maturation because it is fully developed. It will remain at its peak for up to another four years if cellared in cool dry conditions but it is ready to be enjoyed right now.
