Chain of Ponds Morning Star Pinot Noir 2015 (6 x 750mL) SA

In the Vineyard

Fruit for the 2015 Morning Star pinot is sourced from a single block from a single vineyard in the southern Adelaide Hills. Only the best barrels from the block are selected for the Morning Star. The blend is made from 100% MV6 clone from a VSP trellis in Kuitpo.

In the Winery

The fruit was harvested in the early morning and destemmed only,10% of handpicked whole bunches were added to the fermenter. It was cool soaked for 2 days prior to beginning fermentation. It was fermented with minimal cap management via plunging and air sparging in open fermenters with a burgundian isolate yeast to preserve the fresh primary fruit and aromas of pinot noir and help preserve the colour. The wine was pressed off skins after 8 days of fermentation, transferred into 40% new french and 60% 2 and 3 year old french oak. Malo-lactic fermentation was completed while in oak. Left on fine lees for 12 months, the wine was then barrel selected from each parcel and blended to create the final blend.

Expert Reviews

"Richly savoury and complex, the engaging bouquet shows dried cherry, roast meat, truffle, nutmeg and subtle thyme and olive notes. The palate is elegantly weighted and smooth with sweet berry flavours together with fragrant spice undertones, leading to a lingering finish. It is firmly structured and robust with an expansive mouthfeel." - Sam Kim, Wine Orbit - 93pts 5 STARS

Winery Tasting Notes

Colour

Deep cherry red with a light garnet hue.

Bouquet

Intensely vibrant nose displaying bright red fruit, hints of beetroot integrated with dark cherry and fresh raspberry. Subtle spiciness is evident from the addition of whole bunches and adds a hint of freshly cracked pepper. A touch of dried herbs helps give a lift and balance to sweeter fruits.

Palate

On the palate there is juicy red currant and cherry with supporting blueberry fruits, beetroot and blood plum. The fruits are balanced and integrated with savoury dried herbs and a mild pepper note. Medium to full bodied with savoury structural tannins and balanced acidity, persistent and lively on the finish with a good balance of

aromatic oak tannins and primary fruit.
