Windy Peak wines are made at De Bortoli's Dixon's Creek winery from carefully selected fruit grown in the Yarra Valley, King Valley and other regions. With almost ideal weather conditions for whites exceptional fruit has been produced showing intense varietal flavours that are typical Margaret River. Aromatic varieties were outstanding with fresh citrus, lemon blossom and stone fruit on the nose and palate balanced off by crisp acidity. The temperature cooled off toward the end of February providing ideal weather conditions for the red varietals to fully ripen their flavour profiles and tannins. Once again there was a huge amount of Marri blossom leading into vintage therefore Silvereye bird damage was minimal. Flavour intensity was further benefited by the fact that cropping levels were reduced by around 30% across the region due to storms in early spring.

WINEMAKING

Parcels of Cabernet Sauvignon and Merlot grapes from selected vineyards were harvest at optimum maturity to maximise varietal fruit flavours and supple tannins. Fruit was fermented and left on skins in static and rotary fermenters for seven days to maximise colour and flavour extraction. After primary fermentation the wines were soft pressed and underwent malolactic fermentation before being aged in French oak for six months. The wine was then blended and filtered prior to bottling VINTAGE The vintage 2019 growing season was one of the driest on record. Controlled winter watering and careful monitoring of vine stress levels was key to a successful crop. Temperatures tended to be cooler in spring and early summer which caused a slower start to the season, as temperatures began to rise in late Jan early Feb ripening moved along a little quicker and the team were grateful the vines had sufficient canopies to protect the fruit through to maturity. The reds from this vintage show excellent depth of colour and fabulous tannins, whilst the whites display a rich array of aromatics and bright fresh fruit flavours. (271213-10)

FERMENTATION AND AGING

The grapes are carefully hand-picked at the end of August. The pickers revisit the vineyards over and over, only selecting those bunches of grapes at their optimum ripeness. The grapes are de-stemmed, then very gently crushed, causing as little damage as possible to the skins. Very frequent remontage takes place before and during fermentation to obtain optimum colour extraction and soft tannins. There is a total of 15 days skin contact before racking. Specially selected yeasts are added in order to start the fermentation which is temperature controlled at 26-28°C for 10 days. After racking the wine is inoculated with bacteria to induce malolactic fermentation at 20°C for 20-30 days. (271667-1)

VINTAGE The earlier than expected 2017 harvest delivered fruit with excellent varietal characters resulting in wine with an ideal balance of sugar, acid, colour and flavour.The mild weather conditions during spring were followed by warmer than usual February temperatures. Situated on the banks of the Murray River, the Oxford Landing vineyard produces grapes perfect for fresh and varietal wines. The Oxford Landing Merlot vines have been strategically planted on well drained sites to produce vines with low vigour. Careful irrigation control and management of the vineyard promotes well balanced vine canopies, thereby maximising fruit quality. Winemaking/Viticulture Fermentation was carried out in a combination of static and rotary fermenters under warm temperature conditions for a period of 6 days. This creates balance between extracting the appropriate tannins for wine structure, and retaining fruit drive and aromatics in the final blend. The wine is stored at 6°C post fermentation to retain natural colour and aromatics of the variety.Winemaker’s Comments Growing conditions remained warm and dry and along with controlled irrigation of the vines, this has allowed the healthy crop of grapes to ripen slowly and evenly. The Merlot harvest commenced in the last week of February, which is right on average, and proceeded for the next month in almost perfect conditions.

Grape varieties

- 93% Shiraz, 4% Cabernet Sauvignon, 2% Merlot Vinification - After night harvesting the Shiraz grapes were crushed into static fermenters. After crushing the must was inoculated with AWRI 796 yeast. Controlled fermentation occurred over seven days, commencing at 24°C reducing to 20°C. Gentle Pump-overs occurred six times daily to maximise the extraction of colour whilst still retaining a soft juicy palate structure. Pump-overs were reduced to twice daily towards the end of fermentation to minimise seed tannin extraction. To avoid any harsh tannins and bitterness only free run and first pressings were used in this blend. After pressing the wines were settled before racking onto American oak for 3 months. (270195-5)

History

The “S” depicted on the front label represents the colours of vibrant and fertile soil found in South Australia’s Langhorne Creek wine region. Famous around the world, South Australia produces superb red wines and our Sheppards Lane Shiraz is no exception. Region Langhorne Creek has a cool maritime climate, notably cooler than McLaren Vale and the Barossa. This is due to a wind known as the Lake Doctor coming off Lake Alexandrina travelling across the Antarctic and Southern Ocean to the Langhorne Creek vines. Soil throughout the region is predominantly deep, alluvial sandy loams, with patches of black, self-mulching clays. Vintage The 2017 Langhorne Creek vintage was reasonably long and slow. The season had high winter and spring rainfall, which led to the extended, cool ripening phase. Harvest for reds began nearly a month later than the previous vintage. Fruit quality was excellent, with Shiraz being one of the highlights of the vintage. (268368-4)
