The exceptionally cool 2012 vintage provided ideal conditions for procuring sparkling base from quality growers. The Gilded Lilly Reserve Cuvée is made from early picked Chardonnay which was perfect material for this fine sparkling wine. (238292-1)

The vineyard is unique, with 322 acres in the dress circle of the Adelaide Hills and the Onkaparinga River running through the property. It is a truly beautiful place. The vineyards size allows great diversity and multiple microclimates and soil types. This, combined with new clonal varietals and best practice management, roduces consistently outstanding wines year after year. At 426m above sea level at its highest point, with an annual rainfall of 800mm to 900mm or so, the vineyard is nestled in one of the coolest viticultural areas on mainland Australia. This terroir is ideally suited to producing premium fine wine. The cool climate promotes long, slow ripening of fruit producing intense, pure fruit flavours for wines of a delicate and complex nature. (240484-1)
Croser Non Vintage Sparkling stays true to the ‘aperitif’ style of Croser Vintage while signalling an evolution of the Petaluma Croser house style. The wine is a blend of the current vintage Croser with reserve wine from several older vintages – with each vintage adding distinctive qualities to the final blend.
Stamp is one of Hardys’ most recognised wine ranges. Released in 1988, the unique labeling features original Australian postage stamps which date back to 1937. Hardy's Stamp realises Thomas Hardy’s vision of creating vibrant wines reflective of the Australian style and enjoyed around the world. Stamp Sparkling is created using gentle pressing of fruit which ensures minimal extraction of phenolics giving a soft palate. Created in 1869, it embodies Moët & Chandon’s unique style, a style distinguished by its bright fruitiness, its seductive palate and its elegant maturity.Created from more than 100 different wines, of which 20% to 30% are reserve wines specially selected to enhance its maturity, complexity and constancy, the assemblage reflects the diversity and complementarity of the three grapes varietals :- The body of Pinot Noir: 30 to 40%- The suppleness of Pinot Meunier: 30 to 40%- The finesse of Chardonnay: 20 to 30%
The grapes were night-harvested early in the season to ensure that the resultant wine exhibited fresh acidity and youthful flavours. The individual fruit parcels were then gently crushed, de-stemmed and air-bag pressed into a stainless steel tank. Only the free-run portion was used. Fermentation with traditional Methode Champenois yeast ensured the retention of its lifted aromatics. Fermented in stainless steel for 7-10 days with a traditional methode champenois yeast. After fermentation the wine was left in contact with less for 3 months to develop mouth feel and complexity. 30% of the base wine underwent malolactic fermentation to add complexity to the aroma and palate as well as fullness to palate. Selected from a vineyard in Kuitpo with north/south row orientation and easterly facing aspect. skeletal soil over a small rise provides ideal site conditions for Pinot Noir. The 2011 vintage started with good vine health and growth with good fruit set. Cooler weather set in as the vintage progressed which produced good fruit flavour with a good backbone of acid. The fruit for this rich spicy Sparkling Shiraz was selected from a cool climate vineyard near Robe on the Limestone Coast and a Plains Road block in McLaren Vale. The grapes from both vineyards were ripened to their optimum level for varietal flavour, the wine was matured in older oak barriques to maintain primary characters.

Chevalier Blanc de Blancs starts with a selection of white grapes: Colombard, Ugni Blanc, Chenin and other different grape varieties. The still wines made from these varieties are selected with great care to assure consistency in the finished wine. The cuvée is carefully assembled by the winemaker and held in a chilled stainless steel pressure- proof vat.
Ruinart Blanc de Blancs is comprised of 100% Chardonnay grapes grown primarily with Premiers Crus from the Côte des Blancs and Montagne de Reims terroirs, both prized for their aromatic finesse. Grapes sourced from the Sézannais hillsides are chosen for their roundness and those from Saint-Thierry massif for lightness and freshness. Ruinart seeks Chardonnays with a floral bouquet which will develop notes of ripe yellow fruit. It is this selection of vineyards which results in the freshness and unexpected roundness in the mouth that makes Ruinart Blanc de Blancs unique.
