Windy Peak Shiraz 2016 (6 x 750mL), Heathcote, VIC.

Fruit is sourced from carefully selected parcels of Shiraz grown on the red cambrian soils of Northern Heathcote. Fruit is harvested at 14.0-15.0 Baume to achieve a balance of fruit ripeness and balanced acidity. Grapes are destemmed and crushed into both static and rotary fermenters. The resultant wine is then fermented for up to two weeks on skins prior to pressing and racking. A third of the blend is matured for 5 months in older casks and the remainder stays in tank for freshness and brightness.

Ninth Island Pinot Noir 2016 (12 x 750mL), Tasmania.

Our aim with this rich and expressive pinot noir style is to bring all of the sensual delicate berry flavours and delights of pinot noir to a peak at an early stage of the wine’s life, while offering a lush round and fleshy textured full bodied palate. To achieve this, the grapes, once picked, are immediately de-stemmed and crushed before being fermented in a combination of Vinimatic, static and open vat ferments. The grape must is then inoculated and fermented at between 25-30°C for a period of 7 to 12 days before being pressed off into stainless steel vessels. The wine then completes full malolactic fermentation and is then bottled early under screw cap. This allows the wine to attain a style that is both intensely perfumed with distinctive soft velvety tannins and rich, fresh, vibrant fruit.

An incredibly mild summer with above average rainfall ensured slow, even ripening of the fruit. To preserve delicate fruit flavours, the fruit was harvested in the cool of the night and delivered in small batches to the winery. The grapes were crushed, yeasted and pumped over in traditional style to avoid the extraction of bitter tannins. Select parcels received American oak maturation for 10 months to add complexity and structure prior to final blending and bottling.
