McGuigan `Black Label` Merlot 2015 (6 x 750mL), SE AUS.

Merlot was originally used as a blending variety, often forming the major component. It tends to be lower in tannins, thus adding some softness to other more powerful reds. All St Hallett wines are made from 100% Barossa fruit. Shiraz is king in the region, but our winemakers are always on the hunt for good quality Barossa Cabernet that can flourish in certain areas. During the ripening period, our winemakers and viticulturalist have constantly monitored both the sugar/acid ripeness and flavour development, co-ordinating the harvest when all parcels are at their optimum.All vineyards are crushed and fermented separately. The Cabernet vineyards destined for this wine were fermented between 6 and 8 days at 22 to 24 degrees. Post fermentation the wine was partially matured in French and American Oak before being blended and bottled.

Windy Peak Shiraz 2016 (6 x 750mL), Heathcote, VIC.

Fruit is sourced from carefully selected parcels of Shiraz grown on the red cambrian soils of Northern Heathcote. Fruit is harvested at 14.0-15.0 Baume to achieve a balance of fruit ripeness and balanced acidity. Grapes are destemmed and crushed into both static and rotary fermenters. The resultant wine is then fermented for up to two weeks on skins prior to pressing and racking. A third of the blend is matured for 5 months in older casks and the remainder stays in tank for freshness and brightness.
