De Bortoli `Windy Peak` Shiraz 2016 (6 x 750mL), Heathcote, VIC.

Fruit is sourced from carefully selected parcels of Shiraz grown on the red cambrian soils of Northern Heathcote. Fruit is harvested at 14.0-15.0 Baume to achieve a balance of fruit ripeness and balanced acidity. Grapes are destemmed and crushed into both static and rotary fermenters. The resultant wine is then fermented for up to two weeks on skins prior to pressing and racking. A third of the blend is matured for 5 months in older casks and the remainder stays in tank for freshness and brightness.

Overall the Great Southern saw an excellent growing season and 2014 harvest.The season was characterised initially by unseasonably strong winds leading to some slight inflorescence damage. These conditions subsided in the two weeks prior to flowering however and much of the Great Southern saw good fruit set. Moderate rainfall during the early growing season was welcome on the wholebut excess moisture did provide a small amount of disease pressure. Later in the season however, the region saw particularly dry conditions with very little rainfall in the two months leading in to harvest and presenting some challenges in particular for dry grown vineyards. A typical strong diurnal effect was observed, with cold nights and warm days leading to a long, uniform slow ripening period.

Hearty stuff. This is like getting a big cuddle from your big and burly Uncle Bob.Upon opening it was like a caged lion - in your face. The Tony Abbott shirt fronting type (not that big Tone ever follows through with his words). Politics and wine reviews don't mix. Moving on...Bold dark fruit plus dark chocolate on the 70% cocoa side. Blackberries and mulberries walk at ease with star anise chipping away before ribs of tannin roll in. The generosity is what makes this wine so appealing and inviting.Over two days of tasting it continued to soften. Some more time in bottle will see it shine furthermore. Interestingly, cedar and caramel were prominent on the first day but dissolved to be almost invisible on the second.This is cold night, big food and big cuddle sort of stuff. Through the planting of select clones on various blocks, Bodega Catena were able to identify the ideal locations. The same varietal and even the same clone, can exhibit distinct aromatic and flavour profiles. All vines are all managed by hand and are trained to produce extremely low yields. Fruit for this blend is grown mainly in Dixons Creek, Tarrawarra and Yarra Glen. The grapes are both hand andmachine harvested with a percentage of the hand harvested used for whole bunch inclusion. A combination ofwinemaking techniques are used to produce a final blend with complexity and balance. These include coldmaceration prior to fermentation, inclusion of whole bunches and warm fermentation at 30°C to 32°C. Minimal handling and filtration is adopted to preserve fruit flavour.
