Following selection of 100 percent Tempranillo grapes, which are then destemmed and crushed, the must is fermented in stainless steel deposits at 28º C for eight days, followed by a short maceration of four days. (228562-1)
The Stoneleigh Latitude range heralds from an area in Marlborough known as the 'Golden Mile'. This 'Golden Mile' is a fertile strip of land covered with ancient riverstones and is highly regarded for its outstanding grape-growing conditions. The resulting wines are aromatically lifted, as well as riper in spectrum, a result of higher concentration of the stones in the area and the effect these have on the vines.
The 2006 Brut Vintage from Champagne Pol Roger is made from the traditional house vintage blend of 60% Pinot Noir and 40% Chardonnay from 20 Grands and Premiers crus vineyards in the Montagne de Reims and the Côte des Blancs. Produced only in limited quantities the Brut Vintage 2006 has been aged for 8 years in the cellars before being disgorged and released onto the market.

This rose´ "de pressées" has been produced under the Bordeaux appellation by Franc¸ois Thienpont, whose family has owned large estates for generations, such as Cha^teau Puygueraud and Vieux Cha^teau Certan. A technical cork, these eliminate any possibility of cork taint and, when Cape Crest is well cellared, they provide consistent evolution for every bottle. Cape Crest ’14 will continue to develop in bottle for five years from harvest.
The 2014 Nautilus Chardonnay is pale straw in colour. The wine displays a complex range of aromas, including citrus blossoms, white peach and toasted almonds. The palate is well integrated, with a good depth of flavour and a refreshingly long finish. This wine has a tight mineral structure in its youth and will develop a creamy texture as it matures.Delicious with pumpkin & goats curd ravioli, sage, nut brown butter, crisp prosciutto and pinoli pine nuts.
The grapes used in the production of this wine come from the whole of Burgundy. The Louis Jadot Bourgogne Pinot Noir comes from a balanced blend of Côte d'Or, Saône et Loire (Mercurey, Buxy) and Irancy areas. Côte de Nuits, Saône et Loire and Irancy bring deep tannins while Côte de Beaune brings more fruitiness.

The 2002 vintage was the smallest in ten years as a result of winter drought and cool weather at flowering, and the best wines were produced from old vines able to draw on deep root systems to tap reserves of moisture. In addition, the summer was relatively cool, which added to the acid structure and lent a fresh vibrancy to the fruit.This gran reserva was carefully elaborated using the traditional method of carbon maceration, with entire grapes sealed in a stainless steel deposit where they undergo alcoholic fermentation. The process produces an excellent wine with an intense colour while preserving the grapes’ natural aromatic character. Then aged in American and French oak barrels for 36 months, and then kept in bottles for a minimum of 24 months or until it reaches its optimal maturation.

Grapes are selected by hands after harvested by machine sorted and de-stalked before being gently pressed in order to extract maximum colour in the juice. Then juice undergoes a traditional fermentation, left on lees for up to 28 days, with regular pumping in small stainless steal vats, under temperature control process. Wine is aged in barrels for approximately 12 months.
