Overview

With a cool ripening season, the fruit was able to hang on the vine to reach its ideal varietal profile. Harvested separately, the batches were all inoculated with a regionally isolated yeast in open top-fermenters. The fermentation of the different varieties was managed in different ways to draw on what they would best bring to the blend. The merlot was hand-plunged daily, the petit verdot grapes were submerged, while the cabernet was regularly delestage. The wines were then placed in French oak barriques for malolactic fermentation and aging for twelve months. The wines were only then blended and returned to oak for another six months to allow the blend to marry together

True to its traditional blend, this wine is greater than the sum of its parts. Rich red-brick in colour, with vibrant aromas of stewed fruit, glazed cherry and aniseed, this medium-bodied wine is perfectly balanced with fine powdery tannins evident throughout the palate. The lingering tactile finish is complemented by persistent choc-mocha flavours
