Winery Tasting Notes

Grapes for this wine are sourced from selected vineyards within Central Victoria including our estate vineyard which provides the foundation of the rich flavours. Close attention to canopy and yield management on an individual site basis ensure the fruit achieves full flavour expression.

Good rainfall in late winter and spring of 2005 ensured that moisture levels were maintained through out the early stages of the growing season. Record temperatures during January and then dry, warm autumn temperatures facilitated rapid ripening and flavour accumulation.

Fermentation: Temperature controlled (20-28 degrees) with regular mixing to ensure full colour and flavour extraction from the skins.

Oak Maturation: 2-5 yr old French and American oak for 13 months. To impart chocolate, vanilla and spice flavours and soften the Tannins in the wine. 30% of the blend was matured in stainless steel to retain the fresh fruit aromatics and vibrancy.

Colour: mulberry red

Aroma: plumy fruit coupled with chocolate, spice and hints of spearmint

Palate: Lifted cherry and plums, hints of minty vanilla, velvety chocolate tannin with a long even finish

Food Match: Seared Venison in with a blueberry and red wine jus or Rocket, Pear, Walnut and Blue Cheese Salad
