Individual parcels were harvested and pressed off skins quickly then fermented cool to retain freshness and aromatic purity. The three region blend is deliberate, with each component adding its own character to the blend: Pemberton (48%) for structure and fresh aromatics and Frankland (52%) for purity and minerality, the warmer season providing lively tropical notes.
