Parcels of Shiraz were harvested in late February and March, with the vineyards being chosen because of their ability to produce fruit that exhibits dark berry characteristics to give the wine depth and opulence.
Each parcel from different vineyards is fermented separately, using open fermenters, and 5% Viognier is added to be co-fermented with the Shiraz. Warm fermentation temperatures combined with regular pumpovers and plunging ensures optimum extraction. The addition of the Viognier adds complexity, freshness, aromatic lift and helps with colour.
Only the best parcels are then selected to produce the wine, which is matured in older French and American oak for structure, and a small portion in new French oak to add complexity to the blend.
