Parcels of Shiraz were harvested in late February and March, with the vineyards being chosen because of their ability to produce fruit that exhibits dark berry characteristics to give the wine depth and opulence.

Each parcel from different vineyards is fermented separately, using open fermenters, and 5% Viognier is added to be co-fermented with the Shiraz. Warm fermentation temperatures combined with regular pumpovers and plunging ensures optimum extraction. The addition of the Viognier adds complexity, freshness, aromatic lift and helps with colour.

Only the best parcels are then selected to produce the wine, which is matured in older French and American oak for structure, and a small portion in new French oak to add complexity to the blend.

Expert Reviews

A pretty and effusive, bright-fruited bouquet of blackberry, sage and licorice; the palate is direct and refreshing, offering a lively core of tannins, acidity and savoury interest; a sanguine wine worth seeking out.

Rating 94 - Drink by 2020 - Ben Edwards, Australian Wine Companion (DEC/2011)

Winery Tasting Notes

Deep red/purple in colour which is typical of this blend.

The wine displays blood plum, liquorice and cedar aromatics with a slight floral, apricot lift from the Viognier.

Excellent structure, it has great depth and richness with savoury, earthy undertones, dark berry fruit and a lingering finish.

5 Star Winery - James Halliday's Wine Companion 2013

Willunga 100 is based in the McLaren Vale region of South Australia, about 40 minutes south of Adelaide. Founded in 2005, the company is a joint venture between quality UK based importer, Liberty Wines, owned and operated by David Gleave MW, and industry veteran John Ratcliffe. A 4.5 Star rated winery by James Halliday, he believes Willunga 100"has hit the scene running, with outstanding value for money."

The wines up until 2009 were made by one of Australia’s most dynamic and awarded winemakers Steve Pannell, assisted by Kate Day. Kate working previously at Mitchelton Wines, Mount Adam and Wellington Wines Tasmania. They are still made by Kate and we are lucky enough to have the experience and expertise of Tim James who has joined us. He is well known on the wine-judging circuit, and was the Managing Director of Wirra Wirra Wine Company for seven years until 2007, and before that was Production Director at Hardy's.

We source our fruit from an array of vineyards, some of which are up to 50 years old, reflecting the character of the area and the varieties from which they are made.

It has been a tradition to hang an Olive Branch above your door to announce the release of a great vintage wine. This blend is appropriately named after this great tradition.
