Careful selection of ripe Shiraz from across regional South Australian vineyards picked at both fruit and tannin ripeness with a portion undergoing “cold soak” to extract the ripe tannins from the skins. The wine was inoculated for malolactic fermentation to soften the natural grape acidity. It was then pressed off skins and into French and American oak for maturation. Lightly fined, then blended and filtered before bottling.

Fresh red cherry aromas, white pepper, fresh herbs and clove, dark chocolate and vanilla from careful oak maturation.
Ripe, vibrant cherry flavours, combined with round, but structural tannins, with vanilla cream and clove-spiced oak with a long, fine finish.
Beef casseroles, Mediterranean pizza, and Italian cold meats, English, Italian or Spanish hard cheeses.
