Picked in the middle of the night in the narrow window right at the cusp of its peak fruit flavour and aroma. Crushed and fermented with mostly free-run juice, we used a Bordeaux yeast strain to allow the release of fruity aromas and flavours. Blended from the cooler regions of South Australia to showcase varietal Sauvignon Blanc characters the wine was lightly fined, stabilised, and filtered then bottled promptly to maintain the wine’s freshness.

Pale straw green, with yellow hues.

Pine, lime, apple and passionfruit fleshiness, on the palate, with citrus acidity, cut grass, and fresh zippy acidity.
A versatile wine that goes well with Thai Beef Salad, Laksa, fresh whiting, or passionfruit cheesecake, and summer fruit salad.
