Winery Tasting Notes
Black core with magenta rim
Rich berries, plums, lavendar and dark chocolate coupled with spice, subtle earth, char / ash and anise. This wine is from a near perfect vintage and very evocative of Barossa Shiraz.
Dark fruit bursts onto the palate. The vibrant acid carries the juicy plummy fruit and bitter chocolate seamlessly through the palate and continues to roll on and on balanced by firm, but fine tannins. This wine is from probably our best vintage to date and will need a few months to settle down, but will age over the medium to long term and will drink well for at least the next decade if cellared well.
Carefully cellared, this wine should last 10+ years.
The many parcels making up this wine were crushed into and fermented in 3, 5, 7 and 10 tonne open top vessels. Regular pump overs 3 times daily were performed during the peak of fermentation to extract flavours, colour and tannins. The batches were drained and pressed to tank, then racked to barrel for oak maturation where malolactic fermentation occurred. All batches were kept seperate and blended just prior to bottling.
