Winery Tasting Notes
Deep black with a magenta rim.
An array of aromas, including black fruits, coffee beans, cloves, pepper and other spices with subtle vanilla and fine cedary char.
The juicy palate bursts out of the gate with red/black fruits coupled with notes of coffee and spice. Overall the wine is elegant and the long juicy finish is restrained with fine tannins and subtle char. Like many wines from the near perfect 2009 vintage, the Angels’ Share will be a keeper.
Serve at room temperature to accompany Italian sausages with caponata (eggplant, red and yellow capsicum, tomatoes, olives and capers).
Carefully celared, this wine should last 10+ years.
The grapes were crushed into and fermented in 5, 7 and 10 tonne open fermenters. During the peak of fermentation the batches received regular pump overs 3 times daily to extract colour, flavour and tannin. The average time on skins was 15 days. The free run was drained off and the skins were pressed, with the pressings then combined with the free run. After 24 hours the wine was racked to barrel where malolactic fermentation proceeded. The final blend was lightly fined and unfiltered prior to bottling.
