With Tar & Roses’ winemaking inspiration coming from Mediterranean grape varietals, it is not surprising that the breadth of their range stretches from the delicious viscous white Pinot Grigio to the complex tannic red Nebbiolo. These wines have been traditionally matched in their country of origin with fine foods also sourced from their local area. The wines complement the local fare and have played a role in the cultural fabric of the community for centuries.

Tar & Roses don’t strive to replicate this tradition but aim to take these varieties and impart their stamp on their production. They want to produce wines that have individual flair and are distinctly varietal and reflective of their terroir as grown here in Australia.

Winery Tasting Notes


Ripe blackberry.


Rich concentrated blackberries and mulberries, earthy with a touch of aniseed. Christmas pudding with custard and cream.


Sweet blood plums, dark chocolate and caramalised vegetables make this a delicious more-ish wine. The wine has fine silky tannin with lingering sweet fruit characters and good acidity.

Food Matching

Well marbled salt-crusted scotch fillet with a rich red wine reduction jus. Slow roasted sweet potato, caramelised baby carrots and broccolini sauteed in butter.

The extensive experience and winemaking knowledge of Don Lewis combined with Narelle King's broad thinking and diverse skill set, brought partnership strength to Tar & Roses. For the past three years, Don and Narelle have been making wine in Priorat, Spain, fuelling their intrigue in the classic European varietals, particularly Nebbiolo.

Their interests were not confined to the varietals or wine styles solely in traditional European regions, but how these varieties could be grown and made in Australia.

Back in Australia, Don and Narelle have concentrated on producing wines from these European varietals in their own region - Central Victoria. Here, they make Tempranillo, Nebbiolo, Pinot Grigio and Sangiovese in addition to a Central Victorian Shiraz, one of Don's signature varieties.

Tar & Roses encapsulates the complexity and interest of this story. One that shows the friendship between Don and Narelle, and the multi-regions of Italy, Spain and Australia. It is a brand that speaks of the traditions of wine merging with the cutting edge of Australian winemaking, bridging the old world with the new.
