The 2011 vintage produced wines that were in balance, with excellent colour and fruit concentration. This Cabernet Sauvignon and Merlot was harvested at optimum ripeness in the cool of the night to preserve delicate fruit flavours. After picking, the grapes were crushed, yeasted and pumped over in traditional style to avoid the extraction of bitter tannins. The wine was then fermented and matured with some American and French oak treatment.
