Overview

Crémant

Sparkling wines designated Crémant are produced using the traditional method, and have to fulfill strict production criteria.

Traditional Method or Method Champenois is based on the same double fermentation process as all Champagnes are made. After first alcoholic fermentation where natural sugar is transformed into alcohol, such a wine is bottled with additional sugar and natural yeasts which provoke a second fermentation into the bottle thus transforming them in those loving bubbles. Such a process takes about 13 months to complete in the underground caves of Burgundy where the constant 12 degrees Celsius temperature and 85% humidity guarantee best result.

Burgundy's two prestigious grape varieties, Pinot Noir and Chardonnay, are mainly used to let the base wine express itself.

In 1860, Prosper Maufoux, who was a notary by trade, left his practice to give his life over to his passion for wine. He set up his own firm in Santenay, a Burgundian village in the heart of the vineyards in southern Côte d’Or.

His son, Cyprien, looked beyond the borders of France, taking Prosper Maufoux wines to the tables of England, The Netherlands and The United States. He was the motor behind a really open attitude to the outside world within the company.

In 1970, his grandson, Pierre, brought Prosper Maufoux’s headquarters to the main square in Santenay. He chose an 1835 mansion house that was built by Jacques Marie Duvault-Blochet, who, at that time, was the owner of the prestigious Romanée Conti estate.This residence has the specificity of housing superb vaulted cellars that are built on two levels, videthe oldest of which dates from the 15th century. This is the setting that the company has chosen to draw on all its skills and mature its gems from Côte de Beaune and Côte de Nuits.In 1994, Mr. Robert Fairchild, the long-time importer of Prosper Maufoux wines to The United States, took up the reins of the company, continuing until his demise.The torch was then taken up by Eric Piffaut, whose family’s roots in Burgundian wine go back to 1898. New resources were put into use to perpetuate and reinforce the existing culture of high quality, develop the company’s international renown and to make the headquarters an attractive venue where customers and visitors find a true welcome and can find out more about the company, wines and region.
