Winery Tasting Notes


Sparkling wines designated Crémant are produced using the traditional method, and have to fulfill strict production criteria.

Traditional Method or Method Champenois is based on the same double fermentation process as all Champagnes are made. After first alcoholic fermentation where natural sugar is transformed into alcohol, such a wine is bottled with additional sugar and natural yeasts which provoke a second fermentation into the bottle thus transforming them in those loving bubbles. Such a process takes about 13 months to complete in the underground caves of Burgundy where the constant 12 degrees Celsius temperature and 85% humidity guarantee best result.

Colour and Bubbles

Pale pink in multiple nuances. The bubbles are fine and musical, the froth is plentiful and lasting.


The bouquet is youthful; great combination of fruitiness and freshness. An exciting fragrance of red fruits (wild strawberries and blackberries), hints of dried apricots, biscuits and butter pastries.


Light and airy in the mouth, it literally quenches the thirst. It ends with a finely-chiselled but long-lasting finish of great finesse.

Food Matching

Aperitif, seafood platters, lobster, Tarte Tartin, fresh fruit, chocolate deserts, chocolate coated strawberries.

Winemaking Notes

Grape varietals: Pinot Noir and Gamay. Hand picked into small free-draining cases, pneumatically pressed as whole bunches, alcoholic and malolactic fermentations in stainless steel, temperature-controlled vats, bottle fermentation in strict respect of the traditional method and ageing in the darkened cellars of an underground quarry which has constant temperature (13°c) and hygrometry (85 %).

Blason de Bourgogne

The Union of Blasons de Bourgogne was formed when four of the largest cooperatives in Burgundy joined forces, to pool resources and expertise and bring together Burgundian wine-growers from the various appellations of Burgundy. In 2002, they launched the hugely successful Blason de Bourgogne wine brand, which has since gone from strength to strength. In 2006 a fifth co-operative, Cave des Hautes-Côtes, joined the Union.

The aim of the Blason de Bourgogne brand was to make Burgundy understandable to consumers; the name Burgundy is synonymous with quality wine for many consumers, but few have a proper understanding of the different villages, vineyards, producers, negotiants and cooperatives.

The styles of the wines are in keeping with tradition - the aim is not to make New World style wines, but to offer consistent quality across all the wines in the range. Quality is paramount, as the Blason group knew that keeping their customers was as important as attracting them in the first place.
