Overview

Appellation: Chablis A.C., Bourgogne

Tense and Crystalline

"In this northernmost region of Burgundy, the unique climatic conditions confer all their freshness and lightness to this singular wine. This is how the name Chablis has become synonymous with "outstanding, dry white wine"… par excellence."

No other wine producing region has ever shown its relationship with geology so strongly. Formed in the style of the myriad tiny oysters (Exogyra virgule) which are intimately incorporated in the marls and chalky-marls of the vineyards, the names Chablis, Chardonnay and Kimmeridgian are inseparable. Thus Chablis draws its incomparable minerality from the soils and sub-soils in an insatiable fashion.

Winery Tasting Notes

Colour

Pale gold with green glints.

Aroma

The crystalline purity nicely brings attention to the white-fleshed fruit aromas (pear, apple). Notes of slightly spicy mint and lime tree compete in terms of freshness and finesse.

Palate

With great richness, this Chablis expresses a profound minerality which upholds flavours of peach, citrus and fern. Straightforward and very long on the palate, the strongly energetic finish is mouth-watering and almost saline

Food Matching

Fish or poultry terrine, exotic dishes, seafood, snails, goats cheese. Serve at 10 - 11°C.

Blason de Bourgogne

The Union of Blasons de Bourgogne was formed when four of the largest cooperatives in Burgundy joined forces, to pool resources and expertise and bring together Burgundian wine-growers from the various appellations of Burgundy. In 2002, they launched the hugely successful Blason de Bourgogne wine brand, which has since gone from strength to strength. In 2006 a fifth co-operative, Cave des Hautes-Côtes, joined the Union.

The aim of the Blason de Bourgogne brand was to make Burgundy understandable to consumers; the name Burgundy is synonymous with quality wine for many consumers, but few have a proper understanding of the different villages, vineyards, producers, negotiants and cooperatives.

The styles of the wines are in keeping with tradition - the aim is not to make New World style wines, but to offer consistent quality across all the wines in the range. Quality is paramount, as the Blason group knew that keeping their customers was as important as attracting them in the first place.

The co-operatives

  • Vignerons des Terres Secrètes
  • Caves des Vignerons de Buxy
  • La Chablisienne
  • Caves de Bailly
  • La Cave des Hautes-Côtes.
