Winery Tasting Notes
We are fortunate to have access to some fantastic vineyards in the Eden Valley. Predominately from a classic red dirt on a limestone soil vineyard in the north of the Eden Valley, which provides a core of black fruit and a luscious mouthfeel, the wine is finished by the elegant lifted fruit from a couple of vineyards high on the ridges of Eden Valley. It is this fruit that gives the wine its peppery almost medicinal lift and elegance.
Every year the Single Wire is our attempt to capture the best of Eden Valley and Shiraz. Again we are fortunate to get our hands on some fantasic Shiraz blocks from right across the region. The red dirt on limestone soils of the northern Eden Valley provide the richness and weight which form the backbone of the wine. The higher elevation and tougher soils along the ridges of the
ranges produce wines with highly lifted cooler climate attributes of shiraz which compliment the red dirt component perfectly.
As always the wines are made using natural yeasts, minimal additions, no fi ltration. We like to use second fi ll barrels for the Single Wire in order to highlight the fruit character of the wine with the oak providing a supporting role only.
