Tasmania is rapidly gaining a reputation for producing award winning sparkling wines, in some cases rivaling that of Champagne. The cool climate extended growing season and low yields are ideal for the high acids needed to yield the fine structured fizz and more concentrated flavours.

Winery Tasting Notes
Very pale gold with bright highlights.
Fresh and sherbety with musky rose floral notes and ripe lemon, along with delicate wild strawberry from pinot noir dominance.
Very lively, small bead with zesty acidity but this is softened by quite rich flavours of strawberry, honey, sweet mandarin and marzipan on the finish. The flavours are persistent and refreshing with added complexity from extended time on lees.
A great aperitif-style sparkling without being too dry; its inherent richness will see it match with a wide variety of food.
Parmesan sablés; smoked salmon on blinis with horseradish cream; chicken fritters; triple cream Brie.
