Sweet black cherry, cranberry, pretty briar.

Released after 6 months bottle age, an additional 5-10 years will further enhance complexity for those who can resist the temptation of enjoying this wine immediately!
Twice cooked duck with dupuy lentils, pink lady apple and jus gras.
One parcel of this fruit went as whole berries in to a small open fermenter. After 36 hours the fruit was inoculated at a low rate to promote a slow start to the fermentation process. Hand plunged daily, with the occasional pump over, contributed to the depth of fruit and colour desired for delivering part of our wine style.
The second parcel went in to a static fermentation tank as 50% whole berry and 50% crushed fruit.
Both parcels were pressed individually and were held as separate batches in new and seasoned French oak. Post secondary ferment these wines were matured on light lees for approximately 11 months. A barrel selection between the two batches was chosen to produce the final wine. A light filtration was performed prior to bottling on 3rd
