Winery Tasting Notes
Vibrant straw with green hue.
Nectarine, white peach, fresh toast, nougat, floral.
Lemon tart, cucumber, white stone fruit, cashew, biscuit, brioche.
Released after 6 months bottle age, this wine will reward those who can refrain from its allure for a further 3 to 8 years.
Scallops grilled, served on pumpkin and chilli puree, topped with basil pesto.
Hand harvested on the 5th March, the fruit was loaded directly in to the press as “whole clusters”. Within 24 hours of pressing, the juice was transferred to fill hand selected barrels consisting of 25% new and 75% seasoned French oak hogsheads. Fermented on oak and aged on lees for 325 days, each barrel left its signature on the wine. After a rigorous tasting, a selection of the finest barrels were racked to tank and stabilised. Bottling took place on 24th February 2011, giving this wine 6 months bottle age prior to release.
