Vibrant pale gold.

Medium term cellaring of 3 - 5 years will se development of the botrytis charactyers in the wine.
The Semillon fruit was harvested later than usual, with elevated sugar levels, to allow for the noble rot Botrytis to set in. The juice was fermented to 9% alcohol volume, preserving approximately 160g/L of residual sugar. The wine was then transferred to seasoned French oak barrels for a six month maturation period, followed by a further 12 month maturation period in stainless steel, before being bottled on 12 January 2010.
