Winery Tasting Notes
Pale crimson with a violet hue.
Plum, dark berry and rhubarb spice.
Wild cherry, jube fruit, nutmeg, dense.
Crispy skin duck with lightly spiced orange glaze or pan fried veal with a wild mushroom ragout.
Medium term cellaring for 4-6 years will further enhance complexity.
Whole berry fermentation and minimal handling ensured the natural finesse of Pinot Noir was maintained. Malolactic fermentation occurred in selected French oak and some in tank. Maturation for 10 months on light lees further enhanced flavour development and created palate softness and roundess. Final wine was blended in February 2010 with a single filtration to clarify the wine immediately prior to bottling.
