Winemaking A hot and dry vintage required careful selection of only the finest fruit. Fruit was selected from three vineyards across the Yarra Valley, each contributing their own unique characteristics to the wine. Grapes were hand harvested, gently crushed and destemmed, pumped over twice daily and aerated daily for flavour and structure. The wine was later matured for 12 months in seasoned French oak, adding complexity and a soft savoury oak influence.
