Overview

These are premium red wines from exceptional vineyard sites where the winemaking philosophy is to let the terroir speak for itself - and it does. The maritime climate provides ideal ripening conditions, while rich 'terra rossa' soil over limestone forces the vines to struggle for survival, ultimately producing wines of intensity and distinction.

Winery Tasting Notes

Aroma

An enchanting and full bouquet of red fruits and violets, with berries and bay leaf notes to complement the central core of plum fuit.

Palate

The wine is medium bodied showing raspberry fruit and oak spice finishing with light silky tannins.

Cellaring Potential

An attractive wine now, though will gain more complex bottle age characters after two years and will cellar for at least five years.

Winemaking Note

At the Smith & Hooper vineyard in Wrattonbully, South Australia, we have learnt a lot about the challenges and rewards in growing Merlot. The canes have a tendency to roll over and so now we trellis them with a catching wire, which gives the vine structure, stability and allows the grapes to receive dappled light. The art in Merlot winemaking is avoiding over extraction of the tannins from the fruit and seeds. Therefore, we make our wines in static fermenters continually tasting the developing wine, pressing the skins when we have structure and weight without tannin hardness. In the pursuit of these soft tannins, we are judicious in our oak selection and the wine remains in barrel for a maximum of eleven months.
