Grape Varietals

This wine is once again a blend of Cabernet Sauvignon (89%) and Cabernet Franc (9%) blended with a small amount of Malbec.

Aroma/Palate

This Cabernet blend is another dark, rich wine in the Skillogalee tradition, with intense colour and powerful, warm aromas and flavours. The wine is full and soft with sweet, leafy fruit flavours, rich vanillin oak and firm structural tannins.

Cellaring Potential

Drink now with rich red meat dishes but this vintage has a backbone of natural acidity that will repay cellaring for 10 - 12 years.

Winemaking Note

The fruit comes from un-irrigated, hand-pruned and hand-picked vines grown at Skillogalee at around 450m above sea level. The wine was made in open fermenters and then basket-pressed. Malo-lactic (secondary) fermentation and maturation took place in predominantly French oak hogsheads for around 24 months, before the separate components were blended and bottled. Vintage 2007 was an exceptional year with good yields of fruit in ideal condition at harvest.

Skillogalee has a small modern, winery, crushing only around 250 tonnes, giving us the opportunity to hand-make individual wines in small batches. Fruit handling and vinification are undertaken using the best of traditional and modern technologies - modern winemaking techniques for whites, to preserve the fruit aromas and flavours, and more traditional techniques for reds - the use of open fermenters and basket pressing to maximise flavour and colour without over-extraction. We focus heavily on gentle fruit handling throughout and our winery hygiene programs are meticulous. In this way, we use the minimum amount of sulphur to keep wines safe from spoilage.
