Hand-picked, destemmed to small fermenters and cold soaked for 5 days. Wild ferment in small batches for 7 days at 28°C. Pressed to barrel for malolactic fermentation. Racked and bottled in June 2013
- VIC - Geelong
Expressive, well textured and boasting excellent volume of fruit. Cherry, plum and spice notes with creamy, cedary input from oak. Tannin is unobtrusive at first but builds as the wine breathes. It lacks X-factor now but it has time on its side. RAting 94 - CM - Drink by 2024 - James Halliday, Australian Wine Companion (FEB/2014)
Winery Tasting Notes
Lifted and perfumed nose displaying violet notes and plum fruits. Complemented by beetroot, spice and earthy characters with cedar oak in the background.
Full complex and rich palate with fresh raspberry and dark fruit flavours and spice notes. There is a touch of sappiness and earthy tones throughout the mid palate, which is rounded out by cedar oak. The wine has full ripe tannins and firm acid giving the wine great structure.
Enjoy and cellar over the next 5 to 7 years.
