“Growing conditions saw initial solid rainfall for winter, then spring rain became quite sparse and certainly when summer approached, there was no doubt we were experiencing drought like conditions. Some very hot temperatures spurred things along in the vineyards in early to mid-January, bringing harvest dates closer by the day. McLaren Vale was thankfully less affected than many regions due to the ever-reliable breeze provided off the Gulf of St. Vincent in the late afternoon and the persistent night-time gully breezes. The hot conditions continued into February, with this fruit subsequently ready for harvest on the 28th of the month. The fruit was absolutely loaded with stunning archetypal varietal flavour and prickly natural acidity. The natural ferments, use of large format oak, extended lees stirring were used to compliment the immense fruit flavour and with a little time to settle in bottle, will be an absolute cracker for summer and beyond!
Colour
Pale straw
Aroma
Frgrant scents of fresh peach and nectarine, beauty sur-lie characters with subtle aromas of toast and spice.
Palate
Full, textural palate of honeydew melon and clingstone peach complimented by hints of honeysuckle and stem ginger that fuses with amid-palate funkiness driven by the wild ferments. Subtle secondary notesof nutty, almond meal like complexity from extended lees stirring are furtherenriched by traces of baked brioche and spice swathed in creamy texture.Loads of limey acidity provide cleansing support and extend into apleasantly lingering, dry finish.
Food Matching
Quite diverse due to its textural nature and full flavour but particularly wellsuited to chicken cacciatore, grilled marron or runny aged brie.
Winemaker Tim Burvill
Growing up in Western Australia, Tim's interest in wine was sparked at a young age by frequent summer holidays to the Margaret River wine region. This passion eventually saw him move to South Australia, where he completed an honours degree in winemaking at Adelaide University's Roseworthy Campus.
His first job out of university was with Southcorp, which as Tim puts it "was the best start to a winemaking career that anyone could ask for." His role as winemaker saw him make wines in regions as diverse as the Barossa Valley, Coonawarra, the Sunraysia and the Riverland. A rapid rise through the winemaking ranks soon saw him vested with the responsibility at the age of 25, of making Southcorp's ultra-premium white wines, including Penfolds Yattarna.
In 2001, Tim decided to follow his own path and began RockBare, focusing on Chardonnay and Shiraz from South Australia's McLaren Vale.
MOJO
South Australia's first vineyards were established in the 1830's. Enjoying a wide range of climates including the cool temperatures of the Adelaide Hills, to the hot summer weather of the Barossa Valley, South Australia is arguably Australia's most diverse wine producing state.
It is from these wonderfully diverse regions that Tim Burvill selects the best varietals to produce Mojo wines. Mojo wines are in keeping with Winemaker Tim Burvill's power-packed fruit driven style.
Mojo was once referred to as a magical charm or amulet containing special powers. It was these supernatural powers that protected from evil or crossed conditions and evoked the bringing of good karma. The secret of our Mojo lies in its ‘magnetism’, with funky branding and great wine.
