Overview

The 2011 vintage was characterised by a cool, wet ripening season across many regions and the Barossa was no exception. The cooler ripening period resulted in a later than normal harvest but with very varietal fruit characters.

Deep plum red in colour.

Aroma

Aromas of ripe dark berry fruits, black currants and plums with mint and varietal leafy notes.

Palate

The palate is rich and flavoursome, full of plush, dark fruit, soft talcy / chalky tannins and hints of oak. This wine has generous length and balance while being rich and soft.

Cellaring

This wine can be enjoyed now but will also improve with careful cellaring.

The Pepperjack wines are rich and honest - showcasing theBarossa's outstanding qualities.

After harvesting, the individual parcels of fruit were crushed, destemmed andfermented separately in traditional style fermenters. The wine was then pressedinto a combination of seasoned and new French and American oak barrels for15 months maturation prior to blending and bottling.
