The Pinot Grigio was harvested at four different stages and levels of ripeness so as to help build complexity of flavours in the resultant wine. The juice was drained off the skins right away so as not to pick up any colour from the pink/bronze coloured berries. It was then left to settle for 24 hours before racking and fermentation. A yeast strain was used to ensure maximum extraction of varietal characters while fermentation temperatures were kept low to capture freshness and aromatics.

Winery Tasting Notes
The wine is pale straw in colour with a slight green olive hue.
Initial aromatics of wildflowers, quince and yellow pear develop to include lime blossom, white petal flowers and sherbet.
The palate is crisp, tangy and taut. Flavours of quince, nashi pear, Granny Smith apple and lime zest are backed by crisp acidity.
