Overview

The 2012 Arneis was machine harvested at night. The fruit was then crushed, de-stemmed and pressed lightly so as to minimise the extraction of harsh tannins. The juice was then inoculated with an Alsatian yeast and fermented at a cool temperature (14 – 15 °C) to allow for the extraction of varietal expression and aromatics. A small parcel of fruit went through a wild ferment so as to add some complexity to the wine.
