The Pinot Grigio was harvested from a section of our leading Pinot Grigio vineyards where the vines naturally produce low yields and grapes with great intensity of flavour. The grapes were hand-picked and placed in a cool room for two days to cool to 6°C. This helps to reduce the extraction of bitter phenolics when the fruit is pressed. The grapes are pressed very lightly so as only the best juice is collected. A portion of the juice is fermented in barrels with wild yeast which adds some lovely, creamy texture and funky notes. The balance of the juice is fermented with added yeast and then the lees stirred after fermentation to add more creamy texture and richness to the wine. The wine is stirred for 5 months before being prepared for bottling.

Winery Tasting Notes
The wine has a light straw colour with a green olive hue.
The nose is similar to a French Chablis, complex with light earthy, funky, nutty notes backed with lemon and limey aromas. As the wine opens up there are savoury, almond meal and flinty aromatics.
The palate is generous yet taut, it is balanced and lush. Flavours of nashi pea and freshly cut yellow pears along with lively acidity give this wine a lovely long, complex and persistent finish.
