The fruit for this Nebbiolo was selected off a new Nebbiolo vineyard which is planted on one of our premier ridge sites. The clone is called 220, this clone is noted for its ability to produce a wine with richer colour and concentration of flavour.
The grapes are hand harvested, crushed then de-stemmed and fermentation is allowed to start immediately, the juice is inoculated with a yeast strain form Barolo. Fermentation lasts for about five days after which the wine is lightly pressed from the skins and allowed to finish fermentation in oak barrels. Here polymerising helps to soften and round the tannins. The wine then goes through malo lactic fermentation in barrel where the wine is aged for a further 20 months.

Winery Tasting Notes
The wine is red brick in colour.
Initial aromas of red berries, spice, rose petal and violets develop to leather, cigar box and earthy notes.
The palate is generous, with lovely, sticky tannins running the length of the wine, these are balanced by soft acidity. Red berries and plum follow onto the palate providing length and persistence.
Serve with the meat from the cheek bones and crackling off Freddy’s famous five spiced whole roasted piggy.
