The objective is to create a youthful, rich and mellow wine. Designed to drink now. A wine of varietal fruits but only the hint of American oak. Oak will add complexity to the flavours and enhance the fruit. This wine must show area characteristics, varietal fruit and have plenty of flavour.
The History behind the label
In 1844 Dr Christopher Rawson and Mary Penfold arrived with their daughter Georgina. They came from the village of Steyning in Sussex in the United Kingdom.
Dr Penfolds planted vines to produce wine for his medical purposes.
He believed wine was good for the treatment of anaemia. The medicinal features of wine were recognised so many years ago.
Dr Penfold died in 1870; his daughter married Thomas Francis Hyland in 1862. In 1895 Mary died and from this time the family took the name of Penfold-Hyland. To this day Kym Tolley’s mother is still Mrs Judith Anne Penfold-Hyland.
Hyland honours the Penfold side of Penley's heritage, the Penfold “Hyland’s. Kym Tolley is 5 generation Penfold-Hyland.
The spirited mythical Unicorn makes up part of the Australian Penfold family crest, and the Australian Southern Cross Stars makes up the other half.
