The Phoenix name recognises the first winemaking company purchased by Douglas Austral Tolley , purchased in 1888. This company began in 1858, as “The Phoenix Winemaking and Distilling Company”, in Stepney, South Australia. In 1888 this was changed to “Tolley Scott Tolley” (T.S.T.) and remained with the family till 1960. D.A Tolley’s great grandson, Kym Tolley, has continued the unbroken family winemaking tradition, establishing Penley Estate in 1988.

Winery Tasting Notes
The colour is vibrant with good depth in the glass and reddish hues.
The aroma is strong with red berry notes with complex black currant leafiness on the bouquet, giving the wine a fresh aroma. The subtle balanced oak imparting a spicy savouriness to the aroma.
The 2012 Phoenix is a medium bodied wine, with firm and fine tannins that are integrated into the wine creating a very smooth and harmonious texture. Very linear with rustic flavours and great balance. The natural acidity adds some delicate chalkiness and earthiness to the wine which leads to a firm and dry finish.
Enjoy with rib eye steak cooked medium rare preferably still on the bone.
