Our Sauvignon blanc vineyards are grouped into two categories, young vine and old vine and the two broad groups are treated differently from each other. The young vines are picked early and give the tropical fruit characters so they are fermented cool with clear juice whilst the old vineyards provide acid, structure and the herbaceous notes so we ferment them with a proportion of solids in the juice to enhance those elements. This wine contains 14.9% Sémillon which is picked as late as possible and fermented clear in stainless steel. The wine is blended, filtered and bottled as soon as possible to capture the fresh vibrancy of both the varieties and the vintage.

Winery Tasting Notes
We time the picking of the Sauvignon blanc based on the acidity of the grapes so we are looking for a vibrant core of acid to provide the focus and length to the wine. The solids in the ferment provide tannin structure and a pleasing grapefruit finish which enhances the length.
In a cool year we promote the acid and tannin to allow a small amount of natural residual sugar to remain in the wine providing texture and a little weight. The Sémillon adds another dimension to the wine and gives it an ability to age far more gracefully than a 100% Sauvignon blanc blend. Fresh and fragrant with mineral chalk characters, citrus notes and hints of tropical fruits.
