Soave Classico DOC, Veneto Garnega 100%. The hand-harvest usually occurs during the last week of September and first week of October. The grapes are cold-soaked for 12 to 24 hours prior to a soft pressing. The grapes are fermented in temperature controlled stainless steel tanks (16-18C) with indigenous yeasts. The wine remains in tank until March - April when it is bottled and rested a further 2-3 months prior to release.
Colour
Yellow straw with golden highlights and greenish hues.
Aroma
Floral bouquet laced with scents of exotic fruits, almonds, hazelnuts and mineral notes.
Palate
The palate is full-bodied, and superbly balanced and harmonious and great minerality on the long finish. Great drinking now, it will improve with 1-3 years in
bottle.
Food Matching
Serve at 10-12C, with a range of fish and shellfish dishes, white meats especially pork and chicken, plus chicken tortelloni in brodo and prawn and radicchio risotto.

The cultivation of the vines is guyot style on well-drained volcanic soils, which allow the grapes, mainlyGarganega and Trebbiano of Soave, to grow to their best advantage.
