Sauvignon Blanc thrives in the cool climate and high altitude of the Adelaide Hills, for it is here that the true essence of this variety is nurtured and expressed. The crisp spring and early summer weather preserves the grape's natural acidity, which heightens and defines the flavour of this noble variety.
Serve this wine chilled, but not too cold.

Winery Tasting Notes
Pungent, intense bouquet bursting with swaty tropical passionfruit, citrus blossom, hints of elderflower with underlying dry grass, a waft of gunflint and an almost old owrld wine aroma.
Smooth, textural, palate laden with fleshy guava and feijoa, over supple hints of blackcurrant and varietal gooseberry. This fruit is well supported by balanced crisp natural acidity that promotes a sherbetty tang through to quite minerally notes providing a crunchy constant amid creamy meringue like softness and an elemental funkiness. The finish is long, dry and leaves a apalate cleansing pink grapefruit freshness.
Drinks well served with blue swimmer crab, grilled prawns or sauteed scallops. If not seafood is brilliant on its own with good company and a simple goats cheese salad.
